Paul Miller has farms in Boort (Lake Marmal), and Yarra Valley. He is on the Board of a vineyard at Coonawarra (SA) and an olive processing plant at Keith (SA). He is involved in testing new farming methods near Ravensthorpe WA. His farms range in size from 8 to 500 ha, where he produces olive oil, wine and dryland chestnuts.
